RokHopiK DIPA -  You might call this RokHopiK Extreme - this is the high gravity, hop heavy version of  RokHopiK.  CaraPils and Crystal 60L give it a darker color and maltier flavor than the traditional version, but if you are looking for the hopiness you expect in a DIPA, this is it.  A combination of Centennial, Cascade  and Willamette hops were added at several times during the brewing process, to give this brew the bitterness you expect, then, by dry-hopping with Saaz hops we added the green, grassy flavor that makes this beer special.  With an ABV of nearly 7% you need to be careful as this beer can sneak up on you.

Irish Red Ale - Roasted malt flavor is the hallmark of this beer, a great mixture of crystal, caramunich and Abbey malts give this beer a unique but mellow flavor with just a hint of Willamette hops in the background.  Recent batches of this beer have had a higher ABV due to improvements in the overall process, and this latest batch is a little over 6%.  While this technically takes this out of the Red Irish Ale category, I don't think anyone will complain.

Chicken Butt Amber Ale - This is a new take on a tried and true recipe.  By adding hops throughout the boiling process it should have a healthy hop flavor, but the addition of a darker crystal malt gives the brew a little more body and ensures that the hops don't overpower the overall flavor.  From a color standpoint you might guess this is a brown ale, but it is really more amber ale - it doesn't have the heaviness of a brown, and the malt doesn't dominate the flavor.  With a 5.5% ABV, this beer is surprisingly refreshing.
